Shellac can be sanded very easily and new coats of shellac will “heal” old coats. Also the thinner is 190 proof alcohol so sanitizing in and of itself.

If you’re up for weekly refinishing, I won’t stand in your way. I do not enjoy sanding corners that much. Microfractures in the surface are problematic before they’re visible.
A surprising number of things are resistant to 95% ethanol - primarily non enveloped viruses. Polio, calicivirus, polyoma, parvoviruses, hep A……and that’s before you give them organic material to settle into.
Wood is beautiful, but it isn’t perfect. And half its beauty comes from imperfections.
